Hi! I’m Mandy — the heart, hands, and baker behind Kirby Cakes.

My baking journey began years ago when I volunteered to make cupcakes for my niece’s birthday. I didn’t realize it then, but that moment was the spark. Seeing how something homemade could bring people together lit a fire in me. Baking slowly became my passion, my creative outlet, and eventually… my business.

The name Kirby Cakes actually comes from a nickname a friend gave me back in middle school. When I started dreaming about turning baking into something real, that name just felt right. It’s been part of me for so long — it made sense to let it grow with this dream.

I’m also the baker for my family’s Christmas tree farm, where hundreds of people visit every year to pick out their holiday tree. Sharing my cookies and treats with the families who come through has become one of my favorite parts of the season. It’s a warm, cozy kind of magic — watching something I made become part of someone’s winter tradition.

When I’m not baking, I’m usually rescuing cats, fostering, or helping local shelters. Animals have always had a huge piece of my heart, so a portion of my cookie sales goes right back into supporting them.

Every cookie, cupcake, and seasonal flavor is made by hand, with intention and care. Kirby Cakes is more than a bakery — it’s a dream that grew from a nickname, a cupcake, and a whole lot of love.
